Almond Cookies


These cookies were whipped up in 15 minutes and hit all the right spots!

They are gluten free, Paleo, vegan, vegetarian and can fit your macros if you are going keto.

Apart from being delicious and ridiculously easy, they are a perfect base recipe for any type of cookies you desire! You can add chocolate chips, nut butter, dried fruit, etc. and create your own masterpiece full of all the good stuff and none of the nasties.

Ingredients:

  • 2 cups of almond meal

  • 1/4 cup coconut oil

  • Pinch of pink salt

Directions:

  1. Preheat oven to 180 degrees and line a baking tray with parchment paper.

  2. Add all ingredients to a mixing bowl and stir until a dough forms.

  3. Roll them into small balls, roughly 1 tsp, then flatten lightly with your hands.

  4. Cook in the over for 8-10 minutes or until golden.

They will last around 7 days in an airtight container or a tad bit longer in the fridge.
